Bison Loco Moco

A classic Hawaiian comfort food made with a juicy bison burger, rice, brown gravy, and a fried egg.

Ingredients:

  • 1 lb Harlow Ranch Ground Bison

  • 3–4 cups cooked Botan White or Brown Calrose Rice

  • 1 packet brown gravy mix, prepared according to package directions

  • 4 eggs

  • Salt & black pepper

  • Oil or butter, for cooking

Directions:

  1. Cook the rice according to the package directions.

  2. Form the ground bison into four patties and season both sides with salt and pepper.

  3. Heat a skillet over medium-high heat and lightly oil the surface. Cook the bison patties for about 3–4 minutes per side, or until cooked to your preferred doneness.

  4. Prepare the brown gravy according to the package directions.

  5. In a separate skillet, fry the eggs to your preferred doneness.

  6. To assemble, place a scoop of rice on a plate or in a bowl. Top with a bison patty and pour brown gravy over the top. Finish with a fried egg.

TIP: Add sautéed onions or mushrooms to the gravy for extra flavor.
