Bison Chili w/ Stew Meat

Super fun & super meaty variation of your favorite chili. Takes a bit more time than ground bison chili, but its sooo good.

Ingredients

  • 2# Bison Stew Meat

  • 2 cans (14-16 oz each) kidney beans, rinsed and drained

  • 2 cans (14-16 oz each) diced tomatoes with juice

  • 1/4 cup taco spice mix

Directions

  1. Brown bison stew meat and add the taco spice mix.

  2. Put browned stew meat and 1 can of tomatoes with juice into pressure cooker for 14 minutes.

  3. Add drained kidney beans and 1 more can of tomatoes,

  4. Set your cooker to slow cook for 30 minutes (or more if you want to eat later.)

  5. We still recommend serving over rice with mayonnaise (Seriously, you will be glad you did.)

  6. Makes about 3 quarts of chili. Serves a lot of people when you add the rice.  

  7. Mix it up variation: Add one can of corn and 1 pkg kielbasa sausage, sliced. Add those during the slow cook segment.
