Savory Bison Osso Bucco

“Broke da mouth bison stew” Season the osso bucco, sear it, and stew it. Serves 4-6

Ingredients:

  • 6# Osso Bucco Soup Bones seasoned with Montreal Steak Seasoning

  • 2T avocado oil or cooking oil

  • 12 oz water

  • 2T Better than Bullion seasoning

  • 1/2 t each: sage, minced onion, garlic powder, and cajun seasoning

  • 4 potatoes, 4 carrots, 4 cloves garlic, 4 stalks celery with leaves

Directions:

  1. Put Montreal steak Seasoning on the meat

  2. Set insta pot to saute, add cooking oil

  3. Sear meat 2-3 minutes on each side and remove from pot

  4. Mix water, better than bullion, and dry spices

  5. Add mixed liquid to the instapot and stir to get any seared bits of meat off of the pot and into the liquid

  6. Add seared cuts to the liquid

  7. Pressure cook for 45 minutes; release pressure

  8. Mix in veggies - The meat should break away from the bones when you stir in the veggies.

  9. Pressure cook the veggies and meat for 9 minutes

  10. Be sure to get the marrow from the bones into the soup - huge flavor booster

  11. Remove bones if desired. Stir to combine meat and veggies.

    Options - serve over rice, risotto, or pasta
