  • Bison meat is has delicate flavor sometimes called “earthy”, but never “gamey”. Compared to beef, bison meat is leaner (lower in fat), higher in protein and other vital nutrients such as iron.

  • Bison can be prepared just like any other red meat, but take care not to overcook it as it’s lower fat content means that it cooks faster and can become tough when overcooked.

  • We proudly raise each bison right here on our ranch, which our family has stewarded for more than 100 years. The ground and water is clean, the soil is monitored, and we are vigilant about the entire herd’s well-being. Let’s just say that we were personally acquainted with each bison in our freezer, prior to their trip to our local USDA-certified butcher.

  • We could never choose! But if we had to, the sirloin steak cooked medium rare might win.

    You can substitute bison meat in any of our favorite recipes. We love to eat and are always cooking up new bison recipes found here!

  • In order to ship fresh frozen bison meat, it needs to be sent via overnight mail, packaged in a styrofoam box with plenty of dry ice. These logistics are a lot for us, our community, and the earth we share. With local sales, we are proud to contributing our regional food supply.
