We are delighted that you have purchased a bulk package from us and want to get your meat cut and wrapped the way you like it. Any questions or special requests, just let me know and we will see what we can do.

1/2 Bison Package

Below are the typical cuts and packaging to expect. However, we have a couple of extra questions to complete your order they way you’d like it. Please complete the form below to let us know your preferences.

- STEAKS: T-bones ~4#, Sirloin ~4#, Tenderloin ~3# Ribeyes ~4#

  • Typical steak thickness 1.25”

  • Typically, 2 steaks per package

- CUBE STEAKS (6#): Typically, 6 one-pound packages with 4 cube steaks per package.

- ROASTS (16#): Typically, 4-5# each and you get 3-4 chuck roasts. Also available: Arm Roast and rump roast on request.

- STEW MEAT (14#): Choose from 1# packages or 1.5# packages

- BURGER (76#): 1# packages 

- MEATY SOUP BONES (10#) (aka osso bucco)

*Stew, burger, meaty soup bones, and roast pounds are swappable

- BONE BROTH BONES (5#)

- BRISKET (5#): Choose from whole or cut in two pieces

- ORGAN MEAT: Tongue, Tail, Liver, Heart. Please choose none, some, or all.

- STEAKS (7#): Filet Mignon/Tenderloin, Ribeye/Ribsteak (bone-in), Sirloin, T-Bone

  • Typical steak thickness 1.25”

  • Typically, 2 steaks per package

- CUBE STEAKS (3#): Typically, 3 one-pound packages with 4 cube steaks per package.

- ROASTS (8#): Typically, 4-5# each and you get chuck roasts. Also available: Arm Roast and rump roast on request.

- STEW MEAT (7#): Choose from 1# packages or 1.5# packages

- BURGER (38#): 1# packages or 1.5# packages

- MEATY SOUP BONES (5#) (aka osso bucco)
